Competition barbecue, minus the judges

Competition barbecue sounds fancy. Mostly it is patience. Meat from our own counter, a rub that has been tested on judges across the Southeast, a steady fire, and nobody pulling it off early.

It is the same thing Bobby teaches in the classes: picking the meat, the rub, fire and wood, where it sits on the smoker and how long it stays there.
